Innovation DirectorNumber of Positions1Location &#8211; CountrySouth AfricaLocation &#8211; ProvinceGautengLocation &#8211; Town \/ CityJohannesburgNandos CasaCentral KitchenJob Description<br \/>\nTo lead and develop the food Innovation Strategy for South African Restaurant Business.<\/p>\n<p>Is accountable for launching Innovation within the Food and Beverage space, existing Product Development and ensuring the very best brand standards of food and food safety<\/p>\n<p>Is responsible for the creation of new innovative product concepts incorporating new and\/or existing ingredients and packaging in order to deliver a product that is delicious and serves our customers\u2019 needs and is operationally executable with market-appropriate gross margins.<\/p>\n<p>Minimum Requirements<br \/>\nDegree in Food Science or Food Technology Diploma or Chef Diploma<\/p>\n<p>Driver\u2019s License and own vehicle<\/p>\n<p>5 years\u2019 experience in the Food industry<\/p>\n<p>Knowledge;<\/p>\n<p>Knowledge of Food and Meal creation (Advanced)<br \/>\nKnowledge of Food processing and Food safety (Intermediate)<br \/>\nKnowledge of qualitative and quantitative research methodologies (entry level)<br \/>\nKnowledge of regulatory Food legislation (Intermediate)<br \/>\nExperience of Food Photography for Food shoots (entry level)<br \/>\nKnowledge of Food microbiology (Intermediate)<br \/>\nDuties and Responsibilities<br \/>\nFood Strategy &amp; Concept Development<\/p>\n<p>Creates and contributes to a comprehensive Food strategy across all regions of responsibility<br \/>\nCollaborates with the Nando\u2019s cross functional team<br \/>\nConducts the development of Nando\u2019s product range to ensure that this remains competitive in terms of range, innovation, quality and pricing<br \/>\nDevelop new concepts and plans as aligned to the Food Plan<br \/>\nBased on concept development strategies, investigate food trends, innovations and consumer needs to identify any unmet food needs<br \/>\nBuild concepts and review through research funnels to identify the top concepts that get approved for taste research<br \/>\nConduct quantitative concept research and costings<br \/>\nProduct Development, Research and Costing<\/p>\n<p>Develop product prototype through technical investigation into raw ingredients and interactions<br \/>\nPresent Concepts &amp; Products to Food team<br \/>\nConduct qualitative taste and sensory research analysis with current target market to identify the preferred product if relevant<br \/>\nDraw up rough costings to establish feasibility of product if required<br \/>\nFollow Nando\u2019s stage gate process taking the product from ideation to launch<br \/>\nApply legislation relating to food safety for SA<br \/>\nDevelop and sign off specifications with Suppliers, including ingredients and products<br \/>\nSign off product at first factory on-line production for NPD\u2019s where possible and relevant<br \/>\nMaintain the Allergen booklet, and regularly update food nutritional &amp; allergen info for all meal items<br \/>\nCross functional collaboration<\/p>\n<p>Collaborate with Group Foods on Existing Product Development and New Product Development.<br \/>\nCollaborate with Operations to establish feasibility of product execution and additional requirements that may be needed<br \/>\nCollaborate with Supply Chain to source required ingredients and packaging within cost parameters and aiming for the best quality.<br \/>\nWork on product enhancements or changes to existing products<br \/>\nWork with Learning and Development to create product training approaches<br \/>\nTrial Preparation, validations and Monitoring<br \/>\n<script async src=\"https:\/\/pagead2.googlesyndication.com\/pagead\/js\/adsbygoogle.js?client=ca-pub-9040931780721427\"\n     crossorigin=\"anonymous\"><\/script><br \/>\n<ins class=\"adsbygoogle\"\n     style=\"display:block\"\n     data-ad-format=\"autorelaxed\"\n     data-ad-client=\"ca-pub-9040931780721427\"\n     data-ad-slot=\"5167572988\"><\/ins><br \/>\n<script>\n     (adsbygoogle = window.adsbygoogle || []).push({});\n<\/script><br \/>\nSupport Brand experience at photoshoot to create point of sale photography<br \/>\nDevelop, write and test SOPs for all new menu items and ensure all existing food SOPs are updated and version controlled .
